Vegetable Puree Soup

Ingredients

  • 2 meat bones
  • 3 quarts water
  • 1 onion
  • 1 parsley root
  • 3 carrots
  • 2 stalks celery
  • 2 cloves garlic
  • 1 T. salt
  • 1 large zucchini
  • 2 potatoes

Instructions

  1. Place all ingredients into a 6 quart pot.
  2. Cook over medium-low heat for 1 1/2 hours.
  3. Remove vegetables. Blend or mash and return to pot. Reheat.
  4. Add Knaidlech or noodles.
  5. Hand blender can be used to blend soup in pot.
